Bseis with Dates (sweet date & flour crumble)

Bathith (also called bathitha; listed on this site under the English spelling Bseis) is a simple Emirati sweet of toasted flour, dates and ghee, served with Arabic coffee. It was made from ingredients found in every old household: wheat, dates and ghee.

Ingredients for Bseis with Dates

Method

  1. Toast the flour in a heavy pot over medium heat, stirring constantly, for about 10 minutes until golden and fragrant, then sift.
  2. In another pot put the dates and ghee over low heat and mash with a spoon until the dates dissolve into a smooth paste.
  3. Add the toasted flour and cardamom and stir well until the mixture comes together.
  4. Spoon into a tray or serving dish and level with the back of a spoon.
  5. Garnish with toasted sesame or nuts and let it cool before cutting.
