Recipe No.: E-37
Emirati35 minServes 4

Grilled shrimp is one of the simplest seafood dishes of Gulf kitchens: garlic, lemon and a few spices, then a hot fire and a few minutes. Shrimp is caught in the UAE's own waters, so it reaches the table fresh in season.
Ingredients for Emirati Grilled Shrimp
- 700 glarge shrimp, shell-on or peeled with tails
- 5 clovesgarlic, crushed
- 3 tbspfresh lemon juice
- 3 tbspolive or vegetable oil
- 1 tspturmeric
- 1 tspbezar or Arabian spice mix
- ½ tspground cumin
- ½ tsppaprika
- 1 tspsalt and black pepper
- Chopped fresh coriander and lemon wedges to serve
- Daqoos or white rice to serve (optional)
Method
- Clean the shrimp, remove the dark vein from the back, rinse and dry thoroughly.
- Mix the garlic, lemon, oil, turmeric, bezar, cumin, paprika, salt and pepper in a bowl.
- Toss the shrimp in the marinade and refrigerate for just 20 to 30 minutes; the lemon will toughen shrimp if left longer.
- Heat the grill or grill pan well. If you are using wooden skewers, soak them in water for 20 minutes.
- Grill the shrimp for 2 to 3 minutes per side until pink and opaque with light char marks. Do not overcook.
- Serve hot with coriander and lemon, alongside daqoos or white rice.
