Khameer Bread with Dates (sweet Emirati bread)

Khameer with dates is a sweet version of Emirati khameer, kneaded with date water and flavoured with cardamom, giving it a golden colour and natural sweetness. Dates have been a pillar of Emirati cooking for a very long time.

Ingredients for Khameer Bread with Dates

Method

  1. Leave the dates in the hot water for 15 to 20 minutes, mash them in the water with a fork and strain (keep the water for kneading); the mashed date pulp can also go into the dough.
  2. Mix the flour, yeast, sugar, salt and cardamom, then add the warm date water gradually and knead about 10 minutes until the dough is smooth.
  3. Cover and let the dough rise for an hour in a warm place.
  4. Divide into 6 balls, roll into thick discs, brush with egg and sprinkle with sesame.
  5. Cook on a hot griddle or pan over medium heat for 2 to 3 minutes per side until puffed and browned.
  6. Serve warm with cheese or Arabic coffee.
