Madrouba (mashed fish & rice porridge)

Madrouba is a coastal dish of rice and fish cooked and then mashed until thick and smooth; versions made with chicken are also known. It is said that coastal families made it from local fish and the spices they had on hand, so it is more an everyday home dish than a feast dish. The type of fish and the seasoning vary by region and season.
