Mahla Bread (sweet bread)

Muhalla (sometimes written mahla) is a thin Emirati bread of flour, water, saffron and cardamom. It counts among the popular traditional sweets that are still loved, and it is served at gatherings, on Eid and during Ramadan, often with date syrup or honey.

Ingredients for Mahla Bread

Method

  1. Combine the flour, milk powder, baking powder, cardamom, salt and sugar in a bowl.
  2. Add the eggs and the saffron with its water, then whisk in the water gradually to get a smooth, runny batter without lumps.
  3. Cover the batter and let it rest for 30 minutes.
  4. Heat a non-stick pan or griddle over medium heat and brush with a little ghee.
  5. Pour in a ladleful of batter and tilt the pan to spread it thin. Cook until the edges brown and the top sets, then flip and cook 1 minute more.
  6. Repeat with the rest of the batter and serve hot with date syrup or honey.
