Rigag with Honey (thin flatbread)

Rigag with honey is a simple sweet breakfast in the Emirates, eaten warm with Arabic coffee or tea. Honey and date syrup are among the oldest sweeteners of the region.

Ingredients for Rigag with Honey

Method

  1. Whisk the flour and salt with the water gradually into a smooth, runny batter like thin cream, and let it rest for 30 minutes.
  2. Heat a flat griddle or inverted pan over medium-high heat until very hot and wipe with a little fat.
  3. Pour a small ladle of batter and spread it quickly with a spoon or wet hand into a very thin disc.
  4. Cook 1 to 2 minutes until the top is dry and the underside lightly browned, without flipping.
  5. Brush each disc with melted ghee if you like, then fold in half and in half again.
  6. Pour the honey or date syrup over it, sprinkle with sesame and serve warm.
