Saffron Khabeesa (toasted flour pudding)

Khabeesa is an old Emirati sweet of toasted flour, ghee and sugar, scented with saffron, cardamom and rose water. The name khabees appears in medieval Arabic cookbooks, but the present-day Emirati method differs from those early recipes.

Ingredients for Saffron Khabeesa

Method

  1. Toast the flour in a heavy pot over medium heat, stirring constantly, for 10 to 15 minutes until golden and nutty.
  2. In another pot heat the sugar with the water until it dissolves and keep it warm.
  3. Melt the ghee into the toasted flour over low heat and stir for 5 to 10 minutes.
  4. Add the sugar syrup gradually, stirring constantly, until the mixture thickens into a smooth, soft paste.
  5. Take off the heat and stir in the saffron, cardamom and rose water.
  6. Serve warm in a dish topped with nuts.
