Emirati50 minServes 4

Fried fish is an everyday dish in Emirati homes, and almost anything the sea provides will do: it is rubbed with a dry spice mix and then fried. It is served with rice, daqoos and fresh greens.
Ingredients for Spiced Fried Fish
- 1 kgfish (kingfish, hamour or shaari), in thick pieces or a whole fish with slashes
- 1 tbspbezar or Arabian spice mix
- 1 tspturmeric
- 1 tspground cumin
- 1 tspsalt
- 3 clovesgarlic, crushed (optional)
- ½Juice of lemon
- Vegetable oil for frying (about 1 cup)
- To serve
- basmati rice, daqoos, fresh greens and lemon
Method
- Rinse the fish and dry it very well with paper towels so the oil does not spatter.
- Mix the bezar, turmeric, cumin and salt and rub into the fish (with the garlic and lemon if using). Cover and leave for at least 30 minutes so the spices soak in.
- Heat the oil in a deep skillet over high heat until almost smoking, then lower to medium.
- Lay the fish in the oil, cook for 5 minutes, turn gently and fry 5 minutes more (longer for a whole fish) until golden and cooked through.
- Drain on paper towels and serve hot with rice, daqoos, greens and lemon.
