Brigadeiro (Brazilian chocolate fudge balls)
Recipe No.: W-86
InternationalBrazilian45 minServes 20

No birthday party in Brazil is complete without a tray of brigadeiros. The sweet is said to have been born in the 1940s, and its name is said to come from the title "brigadeiro" (an Air Force brigadier) held by Eduardo Gomes, a presidential candidate in 1945, whose supporters supposedly sold the sweets to fund his campaign, though much of the story told about its inventor remains unconfirmed. It is cooked from sweetened condensed milk, cocoa and butter until thick, then rolled into balls and covered in chocolate sprinkles, and placed in tiny paper cups.

Ingredients for Brigadeiro
- 1 can(395 g) sweetened condensed milk
- 3 tbsp(20 g) unsweetened cocoa powder
- 1 tbspbutter, plus a little more to grease your hands and the plate
- 1 cup(150 g) chocolate sprinkles (granulado), for coating
- small paper cups, to serve
- Halal note: check that the sprinkles contain no non-halal gelatin and no alcohol
Method
- Put the condensed milk, cocoa and butter in a non-stick pan over low heat.
- Stir constantly with a wooden spoon for 10–15 minutes until it thickens; when the spoon draws a line across the bottom of the pan that stays open for 2–3 seconds, it has reached the right consistency.
- Pour it onto a buttered plate and leave to cool for 30 minutes.
- Butter your hands lightly and roll a spoonful of the mixture into a ball about 2 cm across.
- Roll the balls in the sprinkles until coated on all sides and place them in the paper cups.
- Serve on the same day, or keep covered in a cool place for up to two days.
