Emirati Aseeda (porridge)

Aseeda is a traditional home-cooked dish known across the Arabian Peninsula, and there are several Emirati versions of it. It is usually made from flour or other starchy ingredients with ghee and a sweetener, and the quantities differ by region and family.

Ingredients for Emirati Aseeda

Method

  1. Heat the sugar in a heavy pot over medium heat until it melts into a golden caramel, without burning it.
  2. Very carefully add the hot water in batches, as the mixture will bubble up, and stir until the caramel dissolves.
  3. Mix the flour with 1 cup of separate cold water until no lumps remain, then gradually add it to the syrup while whisking.
  4. Add the cardamom, saffron and salt and keep stirring over low heat for 15–20 minutes until the mixture is cooked and smooth.
  5. Add the ghee and stir, then serve the aseeda hot.
