Mahalabia is a milk pudding known across much of the Arab world; in the Emirates it is usually flavoured with cardamom and rose water and topped with pistachios. It is said to be a light dessert served chilled after rich meals, and it often appears on Ramadan and hospitality tables. Its thickness depends on the amount of starch and each household’s habit.
